Since joining Honey Bees in February 2024, Chef Joemerson Dultra has brought with him an inspiring blend of professionalism, leadership, and culinary artistry. His cooking not only delights the senses—it reflects the rich cultural diversity that defines Honey Bees.
“My love for cooking began at home in the Philippines, watching my mom create beautiful, authentic Filipino dishes. Cooking runs deep in our family—from my grandparents to cousins, hospitality is in our blood.”
Chef Joemerson began his culinary journey in 2010 at Museum Café in Makati after earning a degree in Tourism, Hotel & Restaurant Management from the National College of Science and Technology. From there, his talent took him across the world.
He spent 7 years sharpening his skills at the 5-star Viceroy Hotel in the UAE, rising through the ranks from commis to Chef de Partie. During that time, he earned multiple medals from the World Association of Chefs Societies (WACS), including:
Bronze (2013) – Live Cookery (Fish)
Silver (2015) – Live Cookery & Black Box
Merit – Canapés & Finger Foods
In 2018, he joined EMAAR’s Address Downtown in Dubai as Senior Chef de Partie, specializing in Japanese cuisine. Under expert mentorship, he mastered authentic Japanese techniques, helping lead Zeta Restaurant to win Time Out Dubai’s Best New Nightlife Venue (2019).
By 2020, Joemerson became Sous Chef at Park Hyatt Abu Dhabi, and in 2021, he was invited to serve the royal culinary team at the luxurious Emirates Palace, where he was sent to train in Tokyo, Japan at the renowned Mandarin Oriental Tokyo Hotel.
Today, we’re proud to have him as Head Chef at Honey Bees—where he brings world-class Japanese and Filipino fusion to your plate with heart, humility, and passion.
